Trách nhiệm chính
- Manage daily kitchen utility operations and staff, overseeing dish room operations, night cleaning, back dock cleaning, maintenance, banquet plating, and food running.
- Order and manage necessary supplies, equipment, tools, and uniforms for kitchen staff.
- Schedule events, programs, and activities, and coordinate the work of kitchen employees.
- Monitor the inflow of ordered materials, maintain current inventory, conduct inventories of china, glass, and silver, and control inventories of food, equipment, smallware, and liquor.
- Inspect supplies, equipment, and work areas to ensure efficient service and compliance with standards; investigate reports and follow up on employee accidents.
- Enforce loss prevention policies, cleaning routines for serviceware, equipment, floors, and dish room machinery, and ensure all food holding and transport equipment is in working order.
- Ensure compliance with all applicable laws, regulations, food handling, and sanitation standards.
- Communicate relevant information to executives, peers, and subordinates in a timely manner.
- Lead and manage the kitchen team, using interpersonal and communication skills to influence, encourage, and motivate staff; provide leadership, vision, and direction to achieve departmental goals.
- Participate in managing controllable expenses, improve service performance, solicit employee feedback, and understand the impact of departmental operations on overall property financial goals.
Yêu cầu
- High school diploma or GED with 4 years of experience in procurement, food and beverage, culinary, or related professional area.
- OR 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related major with 2 years of experience in procurement, food and beverage, culinary, or related professional area.
